WELCOME
There's only one way for us to make a Lumberjacks Woodfired Pizza with as much heart soul energy and control as we possess. We constantly view from the most critical eye to see if there's anything we can improve.... down to the exact gram weight of cheese. We use kiln dried Ash which is cut at specific age size, length and width so that the heat given off is balanced with the level of flame and duration of burn. This cones from the amount of oil in the wood from the age and the low level of water under 20% is sufficient but we use only under 14% ..... We sweat the detail to bring you the very best pizza.

THE FLOUR
For generations Caputo has been a leading choice among the best pizza makers in Naples, the birthplace of pizza and its signature Neapolitan style. Now for those who pursue the highest quality ingredients for superior pizza crust, Caputo has created Caputo “00” Pizzeria Flour. Their signature product, demanded by the maestri pizzaioli the world over and recognized by the leading Neapolitan pizza certification associations. “00” Pizzeria is our choice for classic Neapolitan Pizza in our wood fired oven. It produces a very soft and flavorful crust with fantastic hydration which along with high quality protein and gluten result in a consistent long-rise dough.

HOBART
We make all our own dough and have sought out the best mixer for pizza dough. The Hobart is a 60lt machine from 1958. These machines were engineered to create great dough.... back then engineers didn't face the issues of creating quiet machines or low power machines just making the best dough in the way that the ingredients want to be mixed. Low friction as it's not a spiral hook turning against a spinning bowl with plastic components to save money. When this machine needs a repair an engineer with mechanical experience has to take it apart and hand make replacement parts from metal from scratch

Went here tonight feeling hopeful that this restaurant could accommodate my gluten free diet.. Not only did they do this but they actually asked us how it was half way through to make sure everything was OK and they were so pleasant and took the time time answer any questions I had. By far the best pizza I have ever had and to put the cherry on top of the cake, as we were finishing our meal 2 small children had arrived with their families and were actually rolling their own dough for their pizzas! Amazing pizzas . The new pizza truck catered my birthday. My guests and I were all delighted with the quality of the food. I would recommend them for any event large or small. Had my first pizza from Lumberjacks last night and it was divine! And the garlic cheese wedges were just as tasty! Service was great and super fast compared to other places, will definitely be back for more!Alisha Shaughnessy
